This vegan and gluten-free recipe is full of flavor and high in protein. It’s also simple to make and budget-friendly. And, since it only takes one pot, clean-up is a breeze!

Ingredients:
- 8 red bell peppers
- 2 clove garlic (thinly sliced)
- 2 tablespoons sherry or red wine vinegar
- 2 tablespoons chopped marjoram (divided)
- Salt
Directions:
- Preheat broiler. Arrange bell peppers on a rimmed baking sheet. Broil for 14-17 minutes, turning occasionally, until the skins are black and blistered. Transfer the peppers to a large bowl, cover with plastic wrap, and let them sit for 15 minutes.
- Remove the pepper skins and discard. Tear the peppers into strips 2 inches wide. Toss the peppers in a clean bowl with garlic, oil, vinegar, and 1 tablespoon marjoram. Season with salt and let sit for at least 20 minutes (up to 4 hours).
- Adjust seasoning as needed. Sprinkle the remaining marjoram on the peppers. Serve and enjoy!
Notes:
Leave the peppers to steam in a covered bowl until cool. This makes them more tender and easier to peel.
