This is one of several modern variations of tabbouleh, a Middle Eastern salad. Tabbouleh is a bold-tasting wheat dish mixing numerous herbs with the mild, nutty flavor of bulgur. Of course, bulgur pairs perfectly with the tang of pomegranate as well as the freshness of mint, adding a nice summer cool to a traditional wheat salad. To top it all off, this dish is easy to make and is packed with nutrients, antioxidants, and fiber.

Ingredients:
- 1 cup bulgur
- 1 teaspoon salt
- 1 cup boiling water
- 4 thinly sliced scallions
- 1/2 cup chopped parsley
- 1/2 cup chopped mint
- 1/3 cup golden raisins
- 1 cup pomegranate seeds
- 2 tablespoons extra-virgin olive oil
- Black pepper (to taste)
Directions:
- Combine bulgur and salt in a medium bowl. Pour the boiling water over the top and cover the bowl with a plate until the water is absorbed (about 30 minutes).
- Next, add the remaining ingredients, toss, and season to taste with salt and pepper. Serve.
